Appleby’s Cheese Biscuits can be enjoyed as a snack on their own as they are bursting with flavour. They can also be used on a cheese board to work with Appleby’s cheese.
Appleby’s Cheese Biscuits
Ingredients:
120g sifted plain flour
60g unsalted butter, softened
60g freshly grated Appleby’s Cheshire or Appleby’s Smoked
Pinch salt
Freshly ground pepper
Pinch cayenne
1 egg yolk
Method:
1. Blend the flour, butter, cheese, salt, pepper and cayenne
2. Add the egg yolk and a little water, and mix until you have a rather stiff paste
3. Knead lightly
4. On a lightly floured surface, roll out 6mm thick
5. Cut into rounds of about 7cm in diameter and prick well with a fork
6. Arrange on lightly oiled baking sheets and bake in a hot oven (220 degrees C) for 9-12 minutes or until golden brown
7. Cool on a rack
